Rosemary Infused Olive Oil Biscotti

INGREDIENTS

  • ¼ cup Olivus Floris Rosemary Infused Olive Oil
  • 2 cups all-purpose flour
  • 3 eggs
  • 1½ teaspoons baking powder
  • ¼ teaspoon of salt
  • ⅔ cup of sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange zest or lemon zest
  • A handful of lightly chopped toasted almonds

INSTRUCTIONS

  • Preheat your oven to 180 degrees celsius.
  • Prepare your baking sheet with parchment paper.
  • Whisk together the flour baking powder and salt in a medium bowl.
  • In another medium bowl, whisk the Olivus Floris Rosemary Infused Olive Oil and sugar together. Add the eggs, the vanilla extract and the zest next.
  • Pour the olive oil mixture over the flour mixture. Add the almonds, and stir the combination using a spoon.
  • Place the dough onto a heavily floured surface. Roll it into a large log and carefully move it onto your baking sheet. Bake it for about 30 minutes.
  • Remove the log and allow it to cool for 15 minutes. You can slice it after.
  • Place the slices on your baking sheet and return to the oven to bake for 7 minutes until golden brown. Turn the slices over and bake for an additional 5 minutes.
  • Let it cool. Serve.
